In Mariya Un Noun’s New Khmer cuisine, traditional Khmer ingredients like fish, kaffir lime, and dried chilies blend harmoniously with influences from European culinary masters such as Andreas Caminada and Frank Giovannini. Mariya revitalizes classic recipes with modern cooking techniques, exemplified in her preparation of Amok, Cambodia’s beloved national dish. Amok, a curry dish traditionally made with fish, chicken, or tofu, is infused with flavors of lemongrass, fish sauce, and galangal. Mariya’s innovative approach to cooking has garnered praise from European star chefs, who recognize her as one of Asia’s finest culinary talents.

MARIYA UN NOUN
Growing up in the slums of Phnom Penh, Mariya only came to the Smiling Gecko Campus by chance. Here she found a job as a kitchen assistant, but quickly her talent and unique sense of taste stood out. Discovered in this way, she was continuously supported and trained so that she can now train young chefs at the Farmhouse Resort herself. They can learn a lot from Mariya. Her mentors include the three Michelin-starred chefs Massimo Bottura, Frank Giovannini and Andreas Caminada. The latter is also the one who predicts a bright future for her “Fine Dining in Phnom Penh”.
